- To make the pastry dough, put the flour in a bowl, and then rub in the margarine until the mixture resembles breadcrumbs.
- Stir in the sugar and spice, then the egg. Mix to a firm dough.
- Turn the dough out on to a lightly floured surface, then roll out and use to a line an 8 inch flan dish or flan ring placed on a baking sheet.
- Line the dough with foil, then fill with baking beans or rice. Bake in a preheated moderately hot oven for 15 minutes, and then remove the foil and beans or rice.
- Meanwhile, make the filling: beat the egg yolks and sugar together until light and creamy.
- Stir in the walnuts and lemon rind and juice. Beat the egg whites until just stiff, and then fold into the walnut mixture.
- Pour the filling into the flan case. Bake in a preheated moderate oven for 30 minutes until lightly browned and risen.
- Decorate the pie with walnut halves and serve hot or cold.
INGREDIENTS
Pastry:
- 250 grams plain whole meal flour
- 200 grams margarine
- 100 grams light soft brown sugar
- 2 tablespoon ground mixed spice
- 4 tablespoons beaten egg

- 4 eggs, separated
- 200 grams light soft brown sugar
- 200 grams walnut halves, chopped
- Finely grated rind and juice of 2 lemon
- Few walnut halves, to decorate
