SUGAR-FROSTED FRUIT PIE

Preparation Method :
- Preheat the oven. Place a baking sheet in the oven.
- Put the flour into a bowl and rub in the butter until the mixture resembles fine breadcrumbs.
- Add enough water to mix to soft but not sticky dough.
- Roll out just under half the dough on a floured surface and use to line the base of a 9-inch pie plate.
- Mix together the corn flour, sugar, cinnamon and orange and lemon rinds and toss together with the apples and lemon juice.
- Pile the mixture into the pastry-lined dish. Dampen the edge of the pastry with water.
- Roll out the remaining pastry and use to cover the pie. Roll out any trimmings and cut out leaf shapes.
- Brush these with water and attach them to the pie.
- Brush the top of the pie with beaten egg white and sprinkle with sugar.
- Place the pie on the hot baking tray in the oven and cook for about 30-40 minutes until golden brown.
INGREDIENTS
- 250 grams self-raising flour
- 100 grams butter
- Water, for mixing and brushing
- ½ tablespoon corn flour
- 50 grams caster sugar
- ½ teaspoon ground cinnamon
- Finely grated rind of ½ small orange
- Finely grated rind of ½ small lemon
- 4 Granny Smith apples, peeled, cored and sliced
- 1 teaspoon lemon juice
- Cream, ice cream or custard, to serve
Topping
- ½ egg white, beaten until frothy
