SPICED CRANBERRY AND APPLE PIE

- To make the pastry dough, put the flour, sugar and spice into a bowl and mix well.
- Add the margarine in pieces and rub into the flour until the mixture resembles breadcrumbs.
- Stir in the nuts, then 2 tablespoons of beaten egg and mix to a firm dough.
- Turn out on to a lightly floured surface and knead lightly, then cover and chill until required.
- To make the filling, put all the ingredients in a bowl and mix well. Spoon into a pie dish.
- Roll out the dough on the lightly floured surface to a shape 2.5 cm / 1 inch larger than the circumference of the pie dish.
- Cut a 1 inch strip of dough from around the edge and press it on to the moistened rim of the pie dish.
- Moisten the strip, and then place the large piece of dough on top. Press firmly to seal, then trim and flute the edge.
- Decorate the top of the pie with the trimmings and make a slit in the centre. Brush with the remaining beaten egg.
- Bake in a preheated moderately hot oven for 30 to 40 minutes until the pastry is crisp and brown.
INGREDIENTS
Pastry:
- 250 grams plain whole meal flour
- 100 grams light soft brown sugar
- 2 tablespoon ground mixed spice
- 200 grams margarine
- 100 grams chopped nuts
- 2 eggs, beaten
Filling:
- 750 grams cooking apples, peeled, cored and sliced
- Finely grated rind and juice of 2 orange
- 500 grams cranberries
- 100 grams fructose
