LEMON CHIFFON PIE

Preparation Method :

  • Mix eggs yolk, the sugar with lime juice and salt.
  • Double boil the mixture, stir constantly. When this is slightly thick add the grated lime rind and the melted china grass. Then remove from fire and allow it to cool.
  • Add the sugar to the egg whites and beat well again, till the sugar granules are completely dissolved.
  • Pour the egg yolk mixture slowly in to the egg white mixture in a glass dish and keep in fridge to set.
  • Cut it into small pieces and serve it with whip cream. Add the cream only just before serving.

INGREDIENTS

  • 10 grams packet, china grass, cut into small pieces and soaked for about an hour
  • 400 ml water
  • 4 eggs yolk, beaten
  • Sugar, to taste
  • 100 ml lime juice
  • ½ teaspoon salt
  • 2 teaspoon grated lime rind
  • Egg whites, Whipped stiffly
  • 150 ml whipped cream
