PRETTY-IN-PINK PAVLOVA

Preparation Method :

• Draw a 9-inch circle on a sheet of baking parchment, turn parchment over and place it on a baking tray.
• Preheat oven to 150oC / 300°F / gas mark 2.
• The Meringue: Put sugar, lemon juice, few drops of red food colour and 1 egg white in a large bowl. Whisk until combined.
• Add another egg white, whisk for a minute or two, then add remaining whites and whisk for about 3-5 minutes or until mixture is stiff and shiny. Whisk in cornflour.
• Spoon the meringue onto parchment. Spread it out to fill the drawn circle, hollowing out the centre a little.
• Bake for about an hour or until very pale golden and crisp on the outside but still soft in the middle. Turn off oven and leave meringue inside until it has cooled completely.
• The Filling: Whip cream, soured cream and orange rind together until mixture just holds its shape.
• Before serving, make the filling. Place meringue on a serving plate and spoon cream over it, leaving a narrow border around the top.
• Place the sliced strawberries and raspberries over cream and serve.
