BOOZY STRAWBERRY PAVLOVA

Preparation Method :

  • Soak the strawberries in fruit liqueur for half an hour.
  • Draw a 9-inch circle on a sheet of baking parchment, turn parchment over and place it on a baking tray.
  • Preheat oven to 150oC / 300°F / gas mark 2.
  • The Meringue: Put sugar, lemon juice and 1 egg white in a large bowl. Whisk until combined.
  • Add another egg white, whisk for a minute or two, then add remaining whites and whisk for about 3-5 minutes or until mixture is stiff and shiny. Whisk in cornflour.
  • Spoon the meringue onto parchment. Spread it out to fill the drawn circle, hollowing out the centre a little.
  • Bake for about an hour or until very pale golden and crisp on the outside but still soft in the middle. Turn off oven and leave meringue inside until it has cooled completely.
  • The Filling: Whip cream, soured cream and strawberries together until mixture just holds its shape.
  • Before serving, make the filling. Place meringue on a serving plate and spoon cream over it, leaving a narrow border around the top.
  • Place the sliced strawberries and kiwi slices over cream and serve.

INGREDIENTS

The Meringue

  • 250 grams granulated sugar
  • 1 tablespoon cornflour
  • 1 teaspoon lemon juice
  • 4 large egg whites

The Filling

  • 250 grams fresh strawberries, hulled, sliced
  • 250 ml double cream
  • 100 ml soured cream
  • 2 tablespoons fruit liqueur
  • 150 grams small strawberries, hulled
  • 2 kiwi fruit, peeled and sliced
