SURPRISE PANCAKES

Preparation Method :

  • Whisk the egg whites until frothy. Add the sugar, vanilla and salt and continue beating until stiff. Blend the egg yolks and flour together with a fork, and then stir in the milk.
  • Grease a 20 cm / 8 inch omelette pan with a little butter and heat. Pour in half the yolk mixture, spread evenly by rotating the pan and immediately spoon half the whites on one half.
  • Cook for 1 minute, and then use a spatula to lift up the half with the egg white filling and fold it over the other half.
  • Cook for another minute to heat the whites through, and then remove from pan. Place in a cool oven while you cook the second pancake.

INGREDIENTS

  • 4 eggs, separated 
  • 2 tablespoon caster sugar 
  • ½ teaspoon vanilla essence good 
  • Pinch of salt
  • 2 tablespoon plain flour
  • 4 tablespoons milk
  • Butter
  • Maple or golden syrup to serve
