Preparation Method :
- Sift together both types of flour, soda bicarbonate and baking powder into a bowl.
- Add the powdered sugar and mix. Add the eggs and mix again. Add the buttermilk and mix well to make a smooth batter.
- Add oatmeal and milk and mix. Add a little oil and vanilla essence and mix well.
- To make the filling, melt butter in a pan and toss all the dried fruit in it for two to three minutes. Transfer into a bowl and let it cool a bit. Add maple syrup and mix.
- Heat a pan, grease it with a little oil. Pour a ladleful of batter and spread evenly on the pan. Drizzle a little oil all round and let it cook on medium heat for two minutes. Flip and cook on the other side.
- Place a little of the filling on one side of the pancake and roll it up.Serve hot.
