Preparation Method :
- Mix the coconut milk with egg in a bowl.
- Add the sugar and coconut to the sifted flours and mix thoroughly. Make a dip in the centre, pour in the coconut milk mixture and beat well until smooth.
- Heat a crepe pan and melt a little butter in it. Pour spoonful of the pancake mixture into the pan and cook over medium heat until it turns pale gold on both sides.
- Transfer into a plate and keep it warm while preparing the bananas. Repeat the process with the remaining batter, grease the pan if needed.
- Cut the bananas diagonally into thick slices. Heat the butter in a pan; add the bananas and toss over medium heat until they start to turn brown and soften.
- Sprinkle the brown sugar and stir till the mixture completely melts; then stir in the lemon juice.
- Garnish with sesame seeds and lemon rind. Serve as a stack layering with banana fritters and pancakes alternately.
