SWEET DUMPLINGS WITH SYRUP

- Sift the flour, salt, sugar and spice into a bowl. Rub (cut) in the butter and stir in the sultanas (raisins). Beat the egg with the orange juice, add to the flour and mix together.
- Drop spoonfuls of the mixture into simmering water, then cover tightly and poach for 15 minutes. Remove dumplings with a slotted spoon.
- To serve, split open, place a pat of butter inside each, then drizzle over golden (corn) or maple syrup.

- 200 gram self-raising flour
- Pinch of salt
- 4 tablespoons sugar
- 3 teaspoons ground mixed spice
- 100 gram butter
- 150 gram sultanas
- 2 eggs
- 250 ml orange juice
- Golden or maple syrup, to serve
