RUM BALLS

Makes :
20 Pieces

Preparation Time :
20 minutes

Cooking Time :
5 minutes

Preparation Method :

  • Chop ginger into small pieces. Combine cream and sugar in medium pan, stir over heat, without boiling, until sugar is dissolved.
  • Bring to boil, simmer, uncovered, stirring constantly, about 3 - 5 minutes or until mixture thickens and darkens slightly.
  • Remove from heat, stir in chocolate, marshmallows and rum, stir until smooth. Stand mixture until warm.
  • Mould rounded teaspoons of warm mixture around pieces of ginger; roll into balls, place on trays; refrigerate until firm.
  • Dip balls into combined extra chocolate and oil, place on baking paper-covered trays; refrigerate until set.

INGREDIENTS

  • 75 grams glace ginger
  • 100 ml canned reduced cream
  • 100 grams caster sugar
  • 250 grams dark chocolate, chopped
  • 150 grams white marshmallows, chopped
  • 1 tablespoon dark rum
  • 2 teaspoons cooking oil
