Preparation Method :
- Beat the egg whites in a large- bowl with an electric mixer on high speed.
- When the egg whites begin to foam, gradually add half the sugar and continue to mix until the mixture forms stiff peaks.
- Beat the yolks in a separate bowl with an electric mixer on high speed. When they begin to become foamy, gradually add the remaining sugar. Continue to mix until thick and creamy.
- Combine the beaten egg whites and yolks.
- Whip the cream until it forms stiff peaks, and fold into the egg mixture.
- Place the espresso in a small bowl and add 4 tablespoons of the cream mixture. Whisk together until smooth. Add the mixture to the large bowl of cream mixture. Mix with a rubber spatula until smooth and blended.
- Transfer to a serving dish and freeze for at least 2 hours. (It is preferable to store the semifreddo in the freezer overnight before serving.)
- Serve in individual serving cups.
