Preparation Method :
- Heat the soured cream and double cream together in a pan until they just come to the boil.
- Pour about one third of the hot mixture into a bowl and stir in white chocolate until melted.
- Stir dark chocolate into the remaining hot cream until melted and mix chopped fresh mint. Leave both to cool.
- Whisk egg whites until soft peak stage and then gradually whisk in sugar until stiff. Fold about half of the whites into the white chocolate mixture and the rest into the dark.
- Spoon half the dark chocolate mixture into 4 glass dessert dishes and chill for about 20-30 minutes or until just set.
- Spoon the white chocolate mixture on top and return to the refrigerator for another 20 minutes or until just set.
- Spoon the remaining dark chocolate mixture on top and chill for another half an hour or until ready to serve. Decorate with grated dark and white chocolate and chocolate curls.
