HUNGARIAN FRUIT BREAD

Preparation Method :

  • Preheat the oven to 180°C/350°F/ Gas 4 and grease and flour a loaf tin. Whisk the egg whites until very stiff, but not crumbly. Fold in the sugar gradually, then the almonds, sultanas and lemon rind.
  • Fold the flour and butter into the egg whites. Tip the mixture into the tin, and bake for about 45 minutes until well risen and pale golden brown.
  • Cool for a few minutes in the tin, then turn out and serve warm or cold, in slices. 

INGREDIENTS

  • Sesame oil, for greasing
  • 10 egg whites
  • 250 grams caster sugar
  • 250 grams flaked almonds, toasted
  • 150 grams sultanas
  • Grated rind of 1 lemon
  • 200 grams plain flour, sifted, plus extra for flouring
  • 8 tablespoon butter, melted
