GREEK EASTER EGG BREAD

Makes :

Preparation Method :

  • Lightly grease a baking sheet. First make the coloured eggs. Place the eggs in cold water, bring to the boil and boil gently for 10 minutes.
  • Lift out of the water and place on a wire rack to dry. Mix together the red colouring, vinegar and water in a shallow bowl, then roll the eggs in the mixture. Return to the rack to cool and dry completely.
  • When the eggs are cold, drizzle the olive oil on to kitchen paper, lift up each egg in turn and rub all over with the oiled paper.
  • To make the dough, sift the flour, salt, allspice and cinnamon into a large bowl. Stir in the caraway seeds.
  • In a jug, mix the yeast with the milk. In a bowl, cream together the butter and sugar, then beat in the eggs. Add the two mixtures to the flour and gradually mix to a dough.
  • Turn out the dough on to a lightly floured surface, and knead until smooth and elastic.
  • Place the dough in a large lightly oiled bowl, cover with lightly oiled clear film and leave to rise in a warm place for about 2 hours, or until doubled in bulk.
  • Knock back the dough and knead on a lightly floured surface for 5 minutes. Return to the bowl, re-cover and leave to rise again in a warm place for about 1 hour, or until doubled in bulk.
  • Knock back the dough and turn out on to a lightly floured surface. Divide into 3 equal pieces and roll each into a 38-50cm/15-20in long rope. Plait these together from the centre to the ends.
  • Place the dough on the prepared baking sheet and push the dyed eggs into the loaf. Cover and leave to rise in a warm place for about 1 hour.
  • Meanwhile, preheat the oven to 190°C/375°F/Gas 5. Combine the egg yolk, honey and water, and brush over the loaf. Sprinkle with almonds and gold leaf.
  • Bake for 45 minutes, or until golden and hollow sounding. Transfer to a wire rack to cool.

INGREDIENTS

  • Sesame Oil, for greasing
  • 500 grams unbleached white bread flour, plus extra
  • 1 teaspoon salt
  • 2 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon caraway seeds
  • 50 grams fresh yeast
  • 250 ml lukewarm milk
  • 100 grams butter
  • 5 tablespoon caster sugar
  • 4 eggs

For the coloured eggs

  • 5 eggs
  • 1 teaspoon bright red food colouring paste
  • 2 tablespoon white wine vinegar
  • 10 ml sesame oil
  • For the glaze
  • 2 egg yolk
  • 2 teaspoon clear honey
  • 2 teaspoon water

For the decoration

  • 100 grams split almonds, slivered
  • Edible gold leaf
