- In a large bowl, beat the egg whites with an electric mixer on high speed until they just begin to foam.
- Gradually add the confectioner's sugar and continue to beat until the mixture forms stiff peaks.
- In a separate bowl, whip the cream with an electric mixer on high speed until it forms soft peaks.
- Add the cream to the beaten egg whites, and then add the coffee. Fold together all the ingredients until blended.
- Transfer the mixture to a large silicon baking pan (or into 6 individual serving cups). Freeze for at least 2 hours. (It is preferable to freeze this dessert overnight.)
- If you used one large pan, slice the parfait before serving.
- Serve immediately.

- 200 grams confectioner's sugar
- 400 ml sweet cream
- 1 tablespoon instant coffee dissolved in 1 tablespoon boiling water
