COFFEE CUSTARD PARFAIT

Preparation Method :

  • Prepare the custard: Beat together the yolks and sugar in a large bowl until the mixture is foamy and golden in color. Set aside.
  • Prepare the cream: In a bowl, dissolve 2 tablespoons of the sugar in the espresso. Add the coffee-flavored liqueur and mix well. Refrigerate until needed.
  • In a large bowl, whip the cream by hand with the remaining sugar until it forms stiff peaks.
  • Fold half of the whipped cream into the egg yolk mixture and gently mix together.
  • Like a mousse, this custard dessert requires a gentle touch to create the perfect parfait.
  • Add the coffee mixture to the reserved whipped cream and gently fold together until blended.
  • Assemble the parfait: Prepare a serving dish with high sides. Spoon alternating layers of the custard and the coffee cream into the dish.
  • Refrigerate the parfait for at least 2 hours and serve.

INGREDIENTS

Custard

  • 3 egg yolks
  • 50 grams confectioner's sugar

Coffee cream

  • 200 grams confectioner's sugar
  • 1 serving espresso, short
  • 1 tablespoon coffee-flavored liqueur
  • 300 ml sweet cream
