- Prepare the custard: Beat together the yolks and sugar in a large bowl until the mixture is foamy and golden in color. Set aside.

- Fold half of the whipped cream into the egg yolk mixture and gently mix together.
- Like a mousse, this custard dessert requires a gentle touch to create the perfect parfait.
- Add the coffee mixture to the reserved whipped cream and gently fold together until blended.
- Assemble the parfait: Prepare a serving dish with high sides. Spoon alternating layers of the custard and the coffee cream into the dish.
- Refrigerate the parfait for at least 2 hours and serve.
