Preparation Method :
- Cream the butter and sugar together in a bowl until light and fluffy, then gradually beat in the eggs, adding a little of the flour after each addition.
- Add all the remaining ingredients, except the slivered almonds.
- Preheat the oven to 190°C / 375°F / Gas mark 5. Grease a shallow, rectangular baking pan and line with parchment paper.
- Spoon the butter mixture into the prepared pan and smooth the top. Sprinkle with the slivered almonds.
- Bake in the preheated oven for about 30 - 35 minutes or until the mixture is cooked and a toothpick inserted into the centre comes out clean.
- Remove from the oven and allow it to cool in the pan. Remove from the pan, discard the parchment paper and cut into bars.

- 175 grams ground almonds
- 100 grams carrot, coarsely grated
- 75 grams golden raisins
- Cooking oil, for oiling
- 150 grams unsalted butter
- 100 grams brown sugar
- 2 eggs, beaten
- 100 grams self-rising whole-wheat flour, sifted
- 75 grams plumped dried apricots, finely chopped
- 120 grams toasted chopped hazelnuts
- 1 tablespoon slivered almonds
- 1 teaspoon baking powder, sifted
- 1 teaspoon ground cinnamon, sifted
