WALNUT MARSHMALLOW MOUSSE WITH A MOCHA SAUCE AND COFFEE

Preparation Method :
- Place the marshmallows and coffee in a large bowl over a pan of hot water and leave until the marshmallows have dissolved, stirring from time to time.
- Allow to cool a little and then place the bowl in iced water until half set.
- Fold in the soft cheese, followed by the cream and walnuts. Spoon into dessert glasses and chill for about 45 minutes.
- To make the sauce, place the sugar and 100 ml of water in a saucepan, bring to the boil and simmer for at least a minute.
- Add the cocoa and whisk continuously until the sauce is smooth.
- Remove from the heat, whisk in the coffee and allow to cool. Spread the sauce to cover the surface of the mousses completely and serve.

- 150 ml double cream, whipped to soft peaks
- 2 tablespoon walnuts, chopped
- 100 ml hot strong black coffee
- 250 grams of soft cheese

- 2 tablespoons cocoa powder
- 2 tablespoons strong black coffee
- 2 tablespoons granulated sugar
