WALNUT MARSHMALLOW MOUSSE WITH A MOCHA SAUCE AND COFFEE

Preparation Method :

  • Place the marshmallows and coffee in a large bowl over a pan of hot water and leave until the marshmallows have dissolved, stirring from time to time.
  • Allow to cool a little and then place the bowl in iced water until half set.
  • Fold in the soft cheese, followed by the cream and walnuts. Spoon into dessert glasses and chill for about 45 minutes.
  • To make the sauce, place the sugar and 100 ml of water in a saucepan, bring to the boil and simmer for at least a minute.
  • Add the cocoa and whisk continuously until the sauce is smooth.
  • Remove from the heat, whisk in the coffee and allow to cool. Spread the sauce to cover the surface of the mousses completely and serve.

INGREDIENTS

  • 150 grams marshmallows, halved
  • 150 ml double cream, whipped to soft peaks
  • 2 tablespoon walnuts, chopped
  • 100 ml hot strong black coffee
  • 250 grams of soft cheese

For the sauce

  • 2 tablespoons cocoa powder
  • 2 tablespoons strong black coffee
  • 2 tablespoons granulated sugar
