MOCHA 'N' ORANGE MOUSSE

Preparation Method :
- Place the chocolate and coffee in a bowl over a pan of simmering water. Heat until melted, stir in the orange rind and the flesh. Allow it to cool.
- Whip the cream and the sugar until soft peaks form. Fold in the fromage frais, stir in the chocolate mixture and spoon into 4 ramekins. Chill until firm.
INGREDIENTS
- 250 grams low-fat plain fromage frais
- 150 grams whipping cream
- 100 grams plain chocolate, broken into squares
- 1 tablespoon instant coffee, dissolved in 1 tablespoon boiling water
- Grated rind of 2 oranges
- 2 oranges, pith removed, and flesh chopped
- 3 tablespoon caster sugar
