GINGERED PEAR AND YOGURT MOUSSE

Preparation Method :
- Put the pears in a pan with the lemon rind and juice, ginger and syrup from the preserved ginger.
- Cover and cook gently for 10 to 15 minutes until the pears arc tender, stirring occasionally.
- Take out the preserved ginger; chop one of the pieces, slice the remainder and set aside.
- Put the pears and juice, egg yolks and yogurt in a blender and blend to a smooth puree.
- Alternatively, rub the pears and juice through a sieve, then beat in the egg yolk and yogurt.
- Sprinkle the gelatine over the water in a small cup and leave until spongy.
- Stand the cup in a pan of hot water and stir until the gelatine has dissolved.
- Stir into the pear puree, with the chopped ginger. Leave in a cool place until thick and just beginning to set.
- Beat the egg whites until stiff, then fold into the mixture. Spoon into 6 individual glasses or dishes and chill in the refrigerator until set.
- Decorate with slices of preserved ginger.

- Finely grated rind and juice of 2 lemon
- 1 teaspoon ground ginger
- 6 pieces preserved ginger in syrup
- 4 eggs, separated
- 500 ml plain low-fat yogurt
- 30 grams powdered gelatine
- 4 tablespoons water
