BRAMBLE MOUSSE
Upon hearing Bramble Mousse, this dish may quite have a strange appeal. However, once you’ve got to see it prepared, you can’t help but be inspired once you’ve tasted it on! It actually has its ingredients; water, yogurt, soft brown sugar, lemon or orange, egg whites, apples and blackberries! Just follow the instructions on how to prepare for it to avoid any hassle!

Preparation Method :
- Put the blackberries in a pan, reserving a few for decoration. Add the apples, orange or lemon rind and juice and the sugar.
- Cover and heat gently for 10 to 15 minutes until the fruit is soft, stirring occasionally. Rub through a sieve into a bowl.
- Sprinkle the gelatine over the water in a small cup and leave until spongy. Stand the cup in a pan of hot water and stir until the gelatine has dissolved.
- Stir the gelatine into the fruit puree with the yogurt and mix well. Leave in a cool place until thick and just beginning to set.
- Beat the egg whites until just stiff, and then fold into the mousse. Transfer to a large serving bowl or individual dishes or glasses.
- Chill in the refrigerator until set, and then decorate with the reserved blackberries.
INGREDIENTS
- 750 grams blackberries, washed and stalks removed
- 500 grams cooking apples, peeled, cored and sliced
- Finely grated rind and juice of 2 orange or lemon
- 8 tablespoons light soft brown sugar
- 30 grams powdered gelatin
- 4 tablespoons water
- 300 ml plain low-fat yogurt
- 4 egg whites
