- Place the brown sugar and butter in a pan and heat gently until melted, then stir in the lemon juice and rum. Whisk the egg whites until stiff, then fold in the sugar and coconut.
- Peel the bananas and slice lengthwise, then arrange in a shallow buttered ovenproof dish. Pour over the rum sauce and top with the meringue.
- Cook in a preheated moderate oven (180°C / 350°F, Gas Mark 4) for 10 to 15 minutes.
