APRICOT JELLY

Preparation Method :
- Place the apricots in a pan with the liquid in which they were soaked, adding more water, if necessary, to cover. Simmer for 20 to 30 minutes until tender.
- Place the apricots and liquid in a blender with the lemon juice and honey and blend until smooth. Add water to make up, if necessary.
- Sprinkle the gelatine over the water in a small heatproof bowl and leave until spongy.
- Place the bowl in a pan of hot water and stir until dissolved. Stir into the apricot mixture.
- Pour into a ring mould and chill until set. Dip the mould quickly into hot water to loosen and turn out on to a serving dish.

- 500 grams dried apricots, soaked overnight
- Juice of 1 lemon
- 4 tablespoons clear honey
- 30 grams powdered gelatine
- 6 tablespoons water
