BLACK FOREST GATEAU

Preparation Method :

  • Separate the egg yolks and the whites. Beat the whites for two minutes till stiff.
  • Add the icing sugar one spoon at a time, beating well.
  • Add the yolks one by one and the essence. Slowly add the boiling water and beat well.
  • Sieve the flour and the baking powder.
  • Fold the flour in the egg mixture using a spatula in batches, by dusting over the egg mixture.
  • Grease the pan mould and dust with flour, pour the prepared batter and bake in a hot oven 180°C / 350°F for about 25 minutes. Allow to cool.
  • Slice into two, horizontally. Drizzle it with some fresh cherry syrup from the tin.
  • Beat cream with sugar. Deseed the tinned cherries. Crush them. Sandwich the cream and the crushed cherries between the two cake halves.
  • Coat the top of the cake with a thick layer of cream with a serrated knife dipped in hot water, level the icing to give a smooth finish.
  • With a star nozzle, make decorative border pattern with grated chocolate and glace cherries. Serve chilled.

  • 3 tablespoon icing / powder sugar
  • 2 tablespoons boiling water
  • 2 tablespoons flour
  • 2 tablespoons sieved cocoa powder
  • ½ teaspoon baking powder
  • 2 eggs
  • ½ teaspoon chocolate essence
  • 3 tablespoons icing sugar
  • 250 ml whipped cream
  • 250 grams cherries
  • 50 grams grated chocolate
