Preparation Method :
- Put the rhubarb in a pan with the orange rind and juice and the brown sugar.
- Cover and simmer gently for 10 to 15 minutes until tender.
- Mash the rhubarb to a pulp by beating vigorously with a wooden spoon, or work to a puree in an electric blender. Leave to cool.
- Heat the milk to just below boiling point. Put the egg in a bowl with the corn flour, fructose and vanilla essence.
- Beat lightly, and then gradually stir in the hot milk.
- Pour the mixture back into the pan and bring to the boil slowly, stirring constantly. Cook, stirring, until the custard thickens.
- Leave to cool, stirring occasionally to prevent a skin from forming, then whisk in the yogurt.
- Stir the custard into the rhubarb puree with the chopped ginger.
- Spoon into a large serving bowl or individual dishes or glasses.
- Chill in the refrigerator, and then decorate with orange slices before serving.

- 8 tablespoons light soft brown sugar
- 300 ml skimmed milk
- 2 eggs, lightly beaten
- 2 tablespoon corn flour
- 4 teaspoons fructose
- 1 teaspoon vanilla essence
- 300 ml plain low-fat yogurt
- 2 tablespoon finely chopped preserved ginger
- Few orange slices, to decorate
