BLACKBERRY FOOL

Preparation Method :

  • Simmer blackberries with orange juice until soft, blend in a food processor. Push mixture through a sieve and discard seeds. Stir in 2 tablespoons light brown sugar.
  • Mix custard powder with a little milk. Heat remaining milk in a small pan until almost boiling, pour onto custard powder and stir until mixed.
  • Return pan to low heat and stir until custard is smooth and thickened. Whisk custard into pureed blackberries and allow to cool.
  • Whip cream until standing in soft peaks. Fold half of the whipped cream into blackberries custard and spoon into serving glasses.
  • Divide remaining cream between dishes and swirl. Chill until ready to serve. Serve decorated with a sprinkling of crushed gingersnaps.

INGREDIENTS

  • 500 grams blackberries, soaked with sugar
  • 100 ml orange juice
  • 100 ml milk
  • 100 ml whipping cream
  • 100 grams light brown sugar
  • Juice of 1 lemon
  • 1 tablespoon custard powder 
  • Crushed gingersnaps, to decorate
