- Place the apricots and orange juice in a saucepan, bring to the boil, cover and simmer gently for 5 minutes. Allow to cool and then liquidize.
- Place the milk and sugar in a saucepan and gradually stir in the ground nee. Bring to the boil, stirring.
- Simmer very gently for 6 minutes, stirring from time to time. Remove from the heat and allow to cool. Fold in a tablespoon of the apricot puree.
- Fold the whipped cream into the rice mixture to loosen the mixture.
- Divide the remaining apricot puree between glass dessert dishes and then spoon the rice mixture on top.
- Chill until ready to serve. Decorate with toasted, flaked almonds, if wished.

- 150 ml orange juice
- 500 ml fresh milk
- 2 tablespoon caster sugar
- 3 tablespoon ground rice
- 320 ml whipping cream, lightly whipped
- Toasted, flaked almonds, to decorate
