APRICOT RICE FOOL

Preparation Time :
25 minutes

Preparation Method :

  • Place the apricots and orange juice in a saucepan, bring to the boil, cover and simmer gently for 5 minutes. Allow to cool and then liquidize.
  • Place the milk and sugar in a saucepan and gradually stir in the ground nee. Bring to the boil, stirring.
  • Simmer very gently for 6 minutes, stirring from time to time. Remove from the heat and allow to cool. Fold in a tablespoon of the apricot puree.
  • Fold the whipped cream into the rice mixture to loosen the mixture.
  • Divide the remaining apricot puree between glass dessert dishes and then spoon the rice mixture on top.
  • Chill until ready to serve. Decorate with toasted, flaked almonds, if wished.

INGREDIENTS

  • 100 grams ready-to-eat dried apricots
  • 150 ml orange juice
  • 500 ml fresh milk
  • 2 tablespoon caster sugar
  • 3 tablespoon ground rice
  • 320 ml whipping cream, lightly whipped
  • Toasted, flaked almonds, to decorate
