VIRGIN PINA COLADA PANNA COTTA

Preparation Method :

  • To make caramelized pineapples
  • In a pan, Heat the butter and add brown sugar. Add the pineapple slices and cook over medium heat.
  •  Once the pineapples cooked and become soft and the sugar syrup starts getting thicker.
  • Take out the pineapples from the syrup.
  • Grease 5 ramekin bowls with butter and Place the pineapple slice on each ramekin.
  • Pour the sugar syrup over these pineapples.
  • To Make panna cotta 
  • Mix fresh cream, milk, coconut milk and brown sugar in a pan and heat in a low flame till they start bubbling.
  • Add freshly grated coconut and cook for 10 minutes and remove from the heat. 
  • Pour in the gelatin crystals soaked in water. stir vigorously to make sure lumps are not  formed. 
  • Pour this liquid over the pineapple slices in the ramekin bowl and keep it in the refrigerator for minimum of 2 hours to 4 hours.
  • Take out the ramekin bowl from the fridge.
  • Heat the saucepan filled with water to a boil.
  • Dip the bottom of these ramekins for not more than 5 seconds in boiled water to loosen it up. 
  • Flip it down to a plate and eat chilled!!

INGREDIENTS

For the Caramelized Pineapples

  • 5 pineapple slices
  • 100 grams brown sugar
  • 20 gms butter

For the Panna Cotta

  • 200 ml Fresh Cream
  • 50 ml milk
  • 100 ml coconut milk
  • 3-4 tablespoon freshly grated coconut
  • 75 grams brown sugar
  • 2 teaspoon gelatine soaked in cold water
