Preparation Method :
- To make caramelized pineapples
- In a pan, Heat the butter and add brown sugar. Add the pineapple slices and cook over medium heat.
- Once the pineapples cooked and become soft and the sugar syrup starts getting thicker.
- Take out the pineapples from the syrup.
- Grease 5 ramekin bowls with butter and Place the pineapple slice on each ramekin.
- Pour the sugar syrup over these pineapples.
- To Make panna cotta
- Mix fresh cream, milk, coconut milk and brown sugar in a pan and heat in a low flame till they start bubbling.
- Add freshly grated coconut and cook for 10 minutes and remove from the heat.
- Pour in the gelatin crystals soaked in water. stir vigorously to make sure lumps are not formed.
- Pour this liquid over the pineapple slices in the ramekin bowl and keep it in the refrigerator for minimum of 2 hours to 4 hours.
- Take out the ramekin bowl from the fridge.
- Heat the saucepan filled with water to a boil.
- Dip the bottom of these ramekins for not more than 5 seconds in boiled water to loosen it up.
- Flip it down to a plate and eat chilled!!
INGREDIENTS
For the Caramelized Pineapples
- 5 pineapple slices
- 100 grams brown sugar
- 20 gms butter
For the Panna Cotta
- 200 ml Fresh Cream
- 50 ml milk
- 100 ml coconut milk
- 3-4 tablespoon freshly grated coconut
- 75 grams brown sugar
- 2 teaspoon gelatine soaked in cold water
