ROAST PINEAPPLE WITH MANGO YOGHURT SAUCE

Preparation Method :
- Preheat the oven to Gas Mark 6 / electric oven 180°C.
- Peel the pineapple and remove any eyes. Cut into 4 wedges and then cut each wedges into triangular slices.
- Arrange these slices in a single layer in a large roasting tin, sprinkle over the sugar and then dot with the butter. Roast at least for 20 - 22 minutes.
- Arrange the pine apple on serving plates, place a mint sprig in the center and serve with mango sauce.
INGREDIENTS
- 1 ripe pineapple
- 3 tablespoons light brown sugar
- 3 tablespoons unsalted butter
For the sauce:
- 1 large, ripe mango
- 220 grams Greek-style yoghurt
- 2 tablespoon caster sugar
- Few drops of vanilla essence
- Fresh mint sprigs, to decorate
