Preparation Method :
- Mix together the mascarpone, rum and brown sugar.
- Heat a griddle pan, add the pineapple slices and cook for 2-3 minutes on each side.
- Serve the pineapple with the mascarpone mixture spooned over the top.

- 2 tablespoons light rum
- 2 tablespoons fine brown sugar
