STUFFED PEACHES
Stuffed Peaches is a healthy dish that you must not hesitate to cook for! It basically consists of eight large peaches, red currant jelly, oranges, cinnamon stick, cloves and whole allspice! It can however suit your taste so prepare for its complete ingredients so that you can expect for its delicious and unending taste!

- Cut the peaches in halt and remove the stones. Scoop out and reserve some of the flesh from the centre of each peach half to allow room for the filling.
- To make the filling, put the egg in a bowl with the almonds, ginger, sugar and reserved peach flesh.
- Mix well, then spoon into the peach halves. Place the peaches in a baking dish.
- Put the orange juice, red currant jelly and spices in a small pan.
- Heat gently until the jelly has dissolved, and then brings to the boil. Pour over the peaches.
- Bake in a preheated moderate oven for about 20 minutes until the peaches are tender when pierced with a skewer.

- 4 tablespoons red currant jelly
- 2 cinnamon stick
- 4 cloves
- 1 teaspoon whole allspice

- 2 eggs, lightly beaten
- 100 grams ground almonds
- 2 tablespoon finely chopped preserved ginger
- 2 tablespoon light soft brown sugar
