PLUM AND ORANGE COBBLER

- To make the filling, place the plums in a baking dish. Add the orange juice and segments and spoon over the honey.
- To make the scones, put the flour, spice, baking powder and salt in a bowl and stir well.
- Rub in the margarine, and then stir in the sugar and orange rind. Add the yogurt or milk and mix to soft dough.
- Turn the dough out on to a lightly floured surface and roll out to about 1 inch thickness.
- Cut out 8 to 10 rounds with a 2 inch biscuit cutter, then arrange them, overlapping, around the edge of the dish. Brush with a little milk or beaten egg.
- Bake in a preheated hot oven for about 15 minutes until the scones are risen and brown and the plums are just tender when pierced with a skewer.

- 750 grams Victoria plums
- Juice of 4 oranges
- 2 orange peel and pith removed and divided into segments
- 6 tablespoons honey
Scones
- 500 grams plain whole meal flour
- 2 teaspoon ground mixed spice
- 4 teaspoons baking powder
- 1 teaspoon salt
- 50 grams margarine
- 50 grams light soft brown sugar
- Finely grated rind of 2 orange
- 300 ml plain low-fat yogurt or skimmed milk
- Skimmed milk or beaten egg, to glaze
