FRENCH ORANGE FLANS

- To make the pastry dough, put the flour, sugar and spice in a bowl and mix well.
- Add the margarine in pieces and rub into the flour until the mixture resembles breadcrumbs.
- Add the beaten egg and mix to firm dough. Turn out on to a lightly floured surface and knead lightly. Cover and chill in the refrigerator until required.
- To make the topping, put the orange slices in a pan and simmer for about 30 minutes until the peel is tender. Drain.
- Divide the dough into 4 pieces. Roll out on a lightly floured surface and use to line individual flan rings, about 4 inches in diameter.
- Alternatively, roll out 4 inch circles and place on a baking sheet. Line the dough with foil, then fill with baking beans or rice.
- Bake in a preheated moderately hot oven for 15 minutes, and then remove the beans or rice and foil.
- To make the filling, put the egg, almonds and fructose in a bowl and beat well to mix.
- Spread in the bottom of the flan cases, and then arrange the orange slices on top, overlapping each other.
- Spoon over the honey. Bake the flans in a moderate oven for 20 minutes.

- 250 grams plain whole meal flour
- 100 grams light soft brown sugar
- 2 tablespoon ground mixed spice
- 200 grams margarine
- 4 tablespoons beaten egg
Topping
- 4 small, thin-skinned oranges, thinly sliced
- 4 tablespoons clear honey
Filling
- 2 eggs, beaten
- 100 grams ground almonds
- 4 teaspoons fructose
