Preparation Method :
- Place the water in a small bowl and sprinkle the gelatine on top. Heat in a microwave for approximately 20 - 30 seconds on full and allow to cool.
- Whisk all the remaining ingredients, until absolute smooth, except the fruit.
- Beat the cooled gelatine into the cheese mixture until completely mixed.
- Pour it into a wetted ring mould and place in the fridge for about 2 hours to set.
- Briefly dip the mould in hot water to loosen the sides and then invert on to serving plate.
- Fill the centre with fruit and pipe cream rosettes on top of the mousse and decorate the rosettes with small pieces of fruit.
INGREDIENTS
- 3 tablespoons water
- 1 sachet of gelatine
- 400 grams condensed milk
- 250 grams curd cheese
- 5 tablespoons fresh lemon juice
- 1 tablespoon fresh lime juice
- 1 teaspoon finely grated lemon zest
- 1 teaspoon finely grated lime zest
- 250 ml soured cream
- Selection of seasonal fruit, prepared as necessary, to serve
- Whipped cream and extra fruit, to decorate
