- Place the sugar and lemon juice in heavy-based frying pan (skillet) or wok and cook, stirring, until the sugar dissolves.
- Add the syrup from the canned fruit and cook for 2 minutes, then add all the fruit and stir-fry for 2 to 3 minutes until heated through.
- Add the rum or brandy, wait 15 seconds, then light it.
- Serve the fruit salad when the flames subside.
INGREDIENTS
- 80 gram brown sugar
- 4 tablespoons lemon juice
- 8 tablespoons reserved syrup from the fruit
- 4 canned peach halves, drained and halved
- 2 banana, quartered
- 4 canned pineapple rings, drained and quartered
- 4 tablespoons rum or brandy
