MANDARIN LAYER DESSERT

- Puree half the drained mandarins in a blender or by rubbing through a sieve. Whip the cream until stiff, and then fold in the fruit puree.
- In a small glass dish, arrange a layer of biscuits (cookies), each one dipped quickly into sherry, topped by a layer of the mandarin cream.
- Repeat until both are used, then decorate the top of each dessert with reserved mandarins.
- Chill for at least 2 hours to allow flavors to develop.

- 600 gram mandarin oranges
- 250 ml whipping or double cream
- 200 gram nice biscuits
- 4 tablespoons dry sherry
