- Place the ricotta cheese and yoghurt in a large bowl and mix thoroughly.
- Fold in the crushed meringues and strawberries and divide between four glass dessert dishes.
- Pour the raspberry coulis over the Eton Mess and decorate with some strawberries.

- 250 grams strawberries, hulled and quartered, plus extra to decorate
- 250 grams ricotta cheese
- 150 grams Greek-style yoghurt
- 4 meringue nests, roughly crushed
- 150 ml Raspberry coulis
