Preparation Method :
- Combine cheese, sugar and butter and mix well. Fold in the dates, walnuts and orange zest.
- Dissolve the gelatine in 2 tablespoons of water over a pan of hot water or by heating in the microwave for 20 seconds. Allow to cool and then add to the citrus juices in a jug.
- Place 3-4 sponge slices in the base of a 1 litre pudding basin and spread a thin layer of the cheese mixture on top. Continue to layer finish with sponge to fit on top.
- Strain the orange mixture and pour over the pudding, make sure that the juices reach the bottom. Chill for about 2 hours or until set.
- To serve, dip the basin in hot water and invert on to the serving plate.
- Spread the cream all over the surface. Extra cream could be piped around the base. Decorate with fruit.

- 75 grams caster sugar
- 75 grams unsalted butter, melted
- 250 grams ricotta cheese
- Zest and juice of 3 oranges
- 10 grams gelatine
- 8 trifle sponges, each cut horizontally into slices
To decorate
- 150 ml whipping cream, whipped
- Seasonal fruit
