- Place the melon in a food processor and process until smooth.
- Add the sugar to the melon and process for 10 seconds.
- Pour in 3 cups of water and the rosewater and process until well combined.
- Strain the liquid through a nylon sieve into a plastic freezer container and freeze for about an hour.
- Remove the melon mixture from the freezer and beat well. Return to the freezer.
- Repeat this process twice till the mixture look like shattered glass.

- 1.5 kg melon, peeled, de-seeded and chopped
- 145 grams caster sugar
- 4 teaspoon rosewater
