GREEN FRUIT SALAD WITH MINT & LEMON SYRUP
Green fruit salads with mint and lemon syrup – a great menu for all! This mouth-watering menu is filled with perfect ingredients that made it more appetizing and delicious. Once you taste it, you will surely crave for more bites and servings.

Preparation Method :
- To make the syrup, pare the rind from the lemon using a potato peeler.
- Put the lemon rind into a saucepan with the wine, water and honey.
- Heat and simmer gently for 10 minutes. Remove from the heat. Add the sprigs of mint and leave to cool.
- Slice the melon in half and scoop out the seeds. Use a melon bailer or a teaspoon to make melon balls.
- Core and chop the apples. Peel and slice the kiwi fruit.
- Strain the cooled syrup into a serving bowl, removing and reserving the lemon rind and discarding the mint sprigs.
- Add the apple, grapes, kiwi and melon. Stir through gently to mix.
- Serve, decorated with sprigs of fresh mint and some of the reserved lemon rind.

- 1small Charentais or honeydew melon
- 2 green apples
- 125 gram seedless white (green) grapes
- 2 kiwi fruit
- Sprigs of fresh mint to decorate
- Syrup
- 1 lemon
- 150 ml white wine
- 150 ml water
- 4 tablespoon clear honey
- Few sprigs of fresh mint
