MANGO & LIME SYLLABUB

- Put the mango flesh into a food processor and then blend to make a puree. Divide the puree between tall serving glasses and place in the fridge to chill.
- Mix the lime zest and juice into the sherry, brandy and sugar and then set aside.
- Place the cream in a bowl and strain the brandy mixture over it, discarding the zest.
- Whisk it until soft peaks form . Spoon over the mango puree. Cover with cling film and return to the fridge for at least 20 - 30 minutes or until ready to serve.

- 2 tablespoon icing sugar
- 2 large ripe mangoes, peeled and stoned
- Grated zest and juice of 2 limes
- 2 tablespoon sherry
- 2 tablespoon brandy
- 220 ml double cream
