MANGO & LIME SYLLABUB

Preparation Time :
25 minutes

Preparation Method :

  • Put the mango flesh into a food processor and then blend to make a puree. Divide the puree between tall serving glasses and place in the fridge to chill.
  • Mix the lime zest and juice into the sherry, brandy and sugar and then set aside.
  • Place the cream in a bowl and strain the brandy mixture over it, discarding the zest.
  • Whisk it until soft peaks form . Spoon over the mango puree. Cover with cling film and return to the fridge for at least 20 - 30 minutes or until ready to serve.

INGREDIENTS

  • 2 tablespoon icing sugar
  • 2 large ripe mangoes, peeled and stoned  
  • Grated zest and juice of 2 limes
  • 2 tablespoon sherry
  • 2 tablespoon brandy
  • 220 ml double cream
