Lime and Mango Parfait is composed of fresh mango puree, limes, brown sugar, powdered gelatin, water, egg whites and lime peel! For sure you would enjoy having this healthy and alluring dish to satisfy not only your curiosity but your taste as well!

Preparation Method :
- Mix the mango puree with the lime rind and juice, brown sugar and Quark.
- Put the gelatine and water into a small bowl and set aside for 1 minute; stand the bowl in a pan of hot water and leave until the gelatine has dissolved, about 3 minutes.
- Stir the dissolved gelatine into the mango mixture and leave on one side until it starts to thicken.
- Beat the egg whites until stiff but not dry; fold lightly but thoroughly into the semi-set mango mixture.
- Spoon into tall glasses and decorate with twists of lime peel.
- Chill in the refrigerator for 1 hour before serving.

- Finely grated rind of 4 limes
- Juice of 2 limes
- 4 tablespoons light soft brown sugar
- 100 ml Quark
- 4 tablespoons powdered gelatine
- 6 tablespoons water
- 4 egg whites
- Twists of lime peel, to decorate
