- Divide the sponge finger pieces between the glass dishes and sprinkle 2 tablespoons of fresh orange juice over the sponges in each dish.
- Pour the cream into a large bowl, add the lemon zest and juice and whisk until soft pea form.
- Combine the yoghurt and lemon curd in a bowl and fold into the lemon cream.
- Spoon over the soaked sponges and chill atleast for 30 minutes.
- Just before serving, decorate with either the almonds or chocolate.
INGREDIENTS
- 150 ml fresh orange juice
- 300 ml double cream
- 12 sponge fingers, broken into pieces
- 150 ml Greek-style yoghurt
- 3 tablespoons good-quality lemon curd
- Juice and grated zest of 1 lemon
- Toasted flaked almonds or grated chocolate, to decorate
