LEMON DELIGHT

Preparation Time :
15 minutes

Preparation Method :

  • Brush the inside of two glass dishes with some of the egg white and coat with the ratafias.
  • Whip the cream until thick, and then stir in the lemon rind and juice, marsala and sugar. Whisk the remaining egg whites until stiff and fold into the lemon cream.
  • Spoon into the dishes and chill well. Decorate with chocolate curls before serving.

INGREDIENTS

  • 4 egg whites 
  • 50 gram ratafias, crushed 
  • 10 tablespoons double cream 
  • Grated rind and juice of 2 small lemon
  • 6 tablespoons Marsala 
  • 4 tablespoons caster sugar 
  • Chocolate curls to decorate
