LEMON CRUNCH FLAN

Preparation Time :
30 minutes

Preparation Method :

  • Put the crushed biscuits in a bowl and stir in the melted butter.
  • Mix well and press over the base of a 9 inch flan ring placed on a baking sheet.
  • Place in the refrigerator to chill for about 10-12 minutes.
  • Whip the cream lightly and stir in the condensed milk with lemon rind and juice. Whip until thoroughly blended.
  • Pour evenly on to the prepared biscuit base and chill in the refrigerator until set.
  • Decorate the flan with biscuit crumbs, whirls of cream and quartered lemon slices.

INGREDIENTS

  • 250 grams sweetened condensed milk
  • 150 grams biscuits, crushed
  • 150 ml double cream
  • 5 tablespoon butter, melted
  • 100 ml lemon juice
  • Finely grated rind of 1 lemon
  • 2 digestive biscuits, crushed, to decorate
  • Whipped cream, to decorate
  • Lemon slices, quartered, to decorate
