Preparation Method :
- Put the crushed biscuits in a bowl and stir in the melted butter.
- Mix well and press over the base of a 9 inch flan ring placed on a baking sheet.
- Place in the refrigerator to chill for about 10-12 minutes.
- Whip the cream lightly and stir in the condensed milk with lemon rind and juice. Whip until thoroughly blended.
- Pour evenly on to the prepared biscuit base and chill in the refrigerator until set.
- Decorate the flan with biscuit crumbs, whirls of cream and quartered lemon slices.
INGREDIENTS
- 250 grams sweetened condensed milk
- 150 grams biscuits, crushed
- 150 ml double cream
- 5 tablespoon butter, melted
- 100 ml lemon juice
- Finely grated rind of 1 lemon
- 2 digestive biscuits, crushed, to decorate
- Whipped cream, to decorate
- Lemon slices, quartered, to decorate
