Preparation Method :
- Preheat the oven to Gas Mark 6 / electric oven 200°C / fan oven 180°C.
 - Lightly brush the surface of a baking sheet with a little of the butter
 - Brush the filo sheets with the remaining butter and cut out circles using a 9 cm pastry cutter or small saucer.
 - Bake in the oven for about 10 - 12 minutes or until crisp and golden. Cool on a wire rack.
 - Place the soft cheese, yoghurt and honey in a bowl and mix together. Cut any large fruit into even-sized pieces.
 - Place pastry circles on individual serving plates, spoon the creamy mixture in the centre.
 - Top with some fruit and repeat the layers, finishing with the pastry. Dust with some icing sugar and serve.
 
INGREDIENTS
- 250 grams low-fat / light soft cheese
 - 150 grams Greek-style yoghurt
 - Fruit (peaches, strawberries), sliced
 - 6 sheets of filo pastry
 - 2 tablespoon butter, melted
 - 25 ml 2 tablespoons runny honey
 - Icing sugar, sifted, to decorate
