STRAWBERRIES ROMANOV

- Cut half of the strawberries into pieces and puree. Cut the remaining strawberries into even sized pieces and divide between glass dishes.
 - Place the port and liqueur in a bowl, sprinkle over the gelatin and leave to soak for a minute or two.
 - Place in a microwave for about 20 - 30 seconds on high. Stir well and allow to cool.
 - Meanwhile fold the icing sugar into the strawberry puree. Whisk the gelatin into the strawberry mixture and then fold in the whipped cream. Spoon over the strawberries.
 - Chill at least for 2 - 3 hours. Decorate with strawberries and mint leaves while serving.
 
INGREDIENTS
- 2 tablespoon port
 - 1 tablespoon Cointreau
 - 15 grams sachet of gelatine
 - 1 tablespoon icing sugar
 - 350 ml whipping cream, whipped lightly
 - 500 grams fresh strawberries, Rinsed and stalks discarded
 - Fresh mint leaves, few small strawberries to decorate
