GOOSEBERRY & ELDERFLOWER COBBLER

Preparation Method :

Place the gooseberries, sugar and butter in a saucepan and cook over a very gentle heat until the butter has melted.
Add the cordial and raise the heat a little. Bring to the boil and simmer for 1 minute.
Transfer to a greased ovenproof dish. Preheat the oven to Gas Mark 6 / electric oven 200°C.
To make the cobbler topping, sift the flour and salt into a large bowl, add the butter and rub in until the mixture resembles breadcrumbs.
Add the sugar stir in and add the egg and half of the milk. Bring the mixture together by adding milk. Roll out the mixture on a floured surface 1 cm thick and cut into medium rounds.
Arrange the scones on top of the gooseberries, brush with a little milk sprinkle with the demerara sugar and Bake for about 15 minutes.
Reduce the temperature to Gas Mark 4 / electric oven 180°C and continue to cook for another 20 minutes or until the scones are cooked and golden brown.
Serve hot or warm, with custard or thick cream.

750 grams gooseberries, topped and tailed
100 grams caster sugar, or to taste

5 tablespoon milk
220 grams self-raising flour
100 grams unsalted butter, cubed
3 tablespoon caster sugar
2 teaspoon Demerara sugar
A pinch of salt
1 large egg, beaten
