FIGS IN SHERRIED YOGURT
Look how it has been decorated with split pistachios and orange peel! This dish has been uniquely named as Figs in Sherried Yogurt which looks so tempting and palatable! Normally, it is sprinkled with mixed spice, chopped shelled pistachios, fresh figs, orange rind and dry sherry!

Preparation Method :
- Make a crisscross cut in the top of each fresh fig, and open each one out slightly.
- Mix the pistachios, apricots, spice and orange rind together; press some of this mixture gently into the centre of each fig.
- Mix the yogurt with the sherry and put a spoonful on to 4 dessert plates; carefully arrange three stuffed figs on each plate.
- Scatter the split pistachios over the top and arrange the strips of orange peel at the edge of each plate.
INGREDIENTS
- 20 fresh figs
- 6 tablespoons chopped shelled pistachios
- 10 dried apricots, finely chopped
- Pinch of mixed spice
- 2 teaspoon grated orange rind
- 150 ml plain low-fat yogurt
- 2 tablespoon medium-dry sherry

- Thin strips of orange peel
